Polysaccharide levels and antioxidant activity in aloe preparations
We examined the relation between antioxidant activity (FRAP) and polysaccharides concentration, determined using Congo Red in fresh aloe gel and commercial product. The observed correlation coefficients were high in both cases (0.92 and 0.96, respectively), that indicate that antioxidant activity comes mainly from polysaccharides. Both parameters are suitable to evaluate the quality of aloe products and their changes during storage.
